Why Can't Humans Digest Cellulose?

Cows can eat grass because they have tiny helper animals in their stomachs called microbes. These microbes carry the special key for plant sugar. We do not have enough of these helpers, so we leave the cellulose behind as fiber. This is why salads keep your tummy happy even if you cannot extract energy from them.
